Ingredients 

Main Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 large Eggs
  • 1 cup Vegetable oil
  • 1 ¼ cups Sugar
  • 2 teaspoon Vanilla extract
  • 2 cups Zucchini, grated
  • 1 cup Blueberries

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, oil, sugar, and vanilla. Stir in zucchini.
  4. Gradually add dry ingredients to wet ingredients. Fold in blueberries.
  5. Pour batter into prepared pan. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in pan for 20 minutes, then remove to a wire rack to cool completely.
