Main Ingredients
- 1 cup Cornmeal
- 1 cup All-purpose flour
- ½ cup Sugar
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- 1 cup Milk
- ¼ cup Vegetable oil
- 2 Eggs
- 1 cup Blueberries fresh or frozen
Preheat your oven to 400°F (200°C). Grease a baking dish.
In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
In another bowl, combine the milk, vegetable oil, and eggs. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Gently fold in the blueberries.
Pour the batter into the prepared baking dish and spread it out evenly.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let cool before slicing and serving.
