  • 1 cup mashed ripe bananas
  • 1 cup grated zucchini
  • ½ cup bran cereal
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup sugar
  • ¼ cup vegetable oil
  • 2 eggs beaten
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large mixing bowl, combine mashed bananas, grated zucchini, and bran cereal. Let sit for 5 minutes.
  3. Add whole wheat flour, all-purpose flour, baking soda, baking powder, and salt to the banana mixture. Stir until just combined.
  4. In a separate bowl, whisk together sugar, vegetable oil, eggs, and vanilla extract. Add to the banana mixture and mix until just combined.
  5. Pour the batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
