  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 cup Buttermilk
  • 2 large Eggs
  • ¼ cup Butter, melted
  • 1 cup Cheddar cheese, shredded
  • ½ cup Cooked bacon, crumbled
  • 2 medium Jalapenos, diced

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a baking pan.
  2. In a mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, eggs, and melted butter.
  4. Combine the wet and dry ingredients, then fold in the cheddar, bacon, and jalapenos.
  5. Pour the batter into the prepared baking pan and bake for 25 minutes, or until golden brown.
  6. Let it cool slightly before serving. Enjoy!
