Ingredients

  • 1 cup cornmeal
  • 1 cup molasses
  • 2 cups boiling water
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 package active dry yeast
  • 5 cups all-purpose flour

Instructions 

  1. 1. In a large mixing bowl, combine cornmeal, molasses, and boiling water. Stir until smooth. Let cool to lukewarm.
  2. 2. Stir in butter and salt. Sprinkle yeast over mixture and let stand for 5 minutes.
  3. 3. Gradually add flour, one cup at a time, beating well after each addition. Knead until smooth and elastic.
  4. 4. Place dough in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  5. 5. Punch down dough and shape into a loaf. Place in a greased loaf pan. Cover and let rise until doubled, about 30 minutes.
  6. 6. Preheat oven to 375°F (190°C). Bake for 35 minutes or until golden brown. Remove from pan and cool on a wire rack.
